Pesto Sauce: Simple and Fullflavored
BY BETTY WATSON
Sometimes not complicating is the best way to enjoy things. And this recipe is the proof. With freshest of the ingredients brought together without hassle you have the most amazing flavorful pesto sauce.
I had this questing always lurking on back of my head “How to make a pesto?”. I knew it was simple but the amount of ingredients always put my recipe on the edge, until I found this pesto sauce recipe. Give it a try and you will fall in love with its simplicity and creamy pesto sauce.
Ingredients:
- Bulk of Parmesan Cheese to make 1/2 Cup grated cheese
- 1/2 cup fresh Parsley
- ¼ cup fresh Basil (or 1 Tbsp dried basil)
- ½ teaspoon Nutmeg
- 2 cloves Garlic
- 1/2 to 1 cup Olive oil
Method:
- Cut bulk Parmesan cheese into ½” cubes. Allow to reach room temperature, then drop into Bosch blender, blend using speed 4 (high).
- While still running oh high, add ½ cup parsley to cheese in blender.
- Now add rest of the ingredients.
- On speed 4, drizzle olive oil – just enough so it blends together and forms a sauce.
- Serve over hot pasta. Enjoy.

I love pesto; those bright, herbaceous flavors can perk up any dish! I like that you cut it with some parsley here, since basil becomes criminally expensive as the days grow colder.

I know exactly what you mean Hannah. I had so high hope for my basil this year but the weather got cold all of sudden and I forgot to bring it in. So tried to get it from grocery for my muffins they were expensive.

I mix the pecorino with the pasta at the same time as the sauce in the pan and stir energetically so the cheese becomes part of the sauce.

With it, I had a pork belly sandwich, which I chose after some dithering because face it, I love pork belly.
